The ratio of monounsaturated fat to saturated fat is higher in Wagyu beef than in any other beef. Forty percent of the saturated fat contained in Wagyu beef is called stearic acid, which has been found to have minimal impact in raising cholesterol levels.
Wagyu beef is also higher in conjugated linoleic acid (CLA), a type of fatty acid; it contains the highest amount of CLA per gram of any foodstuff due to higher linoleic acid levels. Foods with naturally high CLA have fewer negative health benefits.
